Ed & Pramit's Massaman Short Rib

Cooking time: 20-25 minutes



  • 1 potato, cubed
  • Half a shallot, finely chopped
  • Beef short rib, blanched and cubed
  • Wild Rice Massaman sauce
  • Splash of coconut milk



  1. Blanch the beef short rib in boiling water for 10 minutes. Drain and dice. Sear the diced beef until browned. At the same time, boil the potato in hot water until tender.
  2. In a pot over medium heat, sauté the chopped shallot until fragrant.
  3. Pour the Wild Rice Massaman sauce into the pot and add 200ml of water.
  4. Add the diced beef and cubed potato to the pot. Bring to a boil over medium heat. Cook for 10-15 minutes, stirring occasionally, until the potatoes soften and the meat is tender.
  5. Plate the Massaman curry and pour a splash of coconut milk over each serving. Serve hot with a side of steamed rice.
