Nicola's Pad Thai with Scallops and Prawns

Cooking time: 10 minutes

Methods:


1. Cook your chosen noodles of choice as per their cooking instructions
2. Sauté some spring onions (keeping the green bits for the garnish) & add the beansprouts at a fairly high heat to cook through for around 8 minutes. Then I added my sugar snaps but you can add anything you like. Once this was ready I added my cooked noodles along with my sauce & let these cook together for around 5 minutes on a medium heat until piping hot
3. I then seasoned & cooked my scallops & prawns. Took the noodles off the heat, added my fish, gave it a stir, garnished with spring onions, chillies, coriander & some crushed peanut
4. Squeeze lime & enjoy!
