Josh's Kua Kling Stir Fry
Ingredients:
Noodles
1 aubergine (cubed)
1 red onion (sliced)
4 spring onions (sliced)
4 cm ginger (grated)
2 tsp soy sauce
1 tsp rice wine vinegar
1 tsp Kua Kling suace
1 lime juice
Sesame seeds
Coriander
Oil
Method
Pre heat your oven to 200C and roast the aubergine for 20 mins until soft
Cook the noodles as per packet instructions
In a hot wok with oil fry your onions and spring onions until soft
Add the ginger and roasted aubergine and fry until fragrant
Add the soy sauce, lime juice, rice wine vinegar and kua Kling sauce and cook until fragrant
Add the noodles and stir until all combined. Add a touch of water if needed
Serve with coriander, spring onions and sesame seeds over the top
